Yes.
The majority of the loadicator software have this capability.

So, can you extract the historical data in an excel or pdf format stating the cargo carried at the departure of each voyage?
Yes this is possible.
The cargo distribution, intact/damage stability calculations of historical loading conditions can be extracted as well.
