The Navier-Stokes equations are the equivalent for fluids of Newton’s second law of motion trying to describe what happens when milk is mixed into a cup of coffee (Big question every morning
)
They describe the behavior of flowing fluids and are among the Clay Mathematics Institute Millennium Prize problems, problems judged to be the most important open questions in mathematics.
Navier-Stokes equations, Mawell’s equations, and Chaos theory are my favourites
